There is a lot of noise right now with people deciding to go vegan. I have to tell you I never thought in a million years I would go vegan, but I DID!
2+ years ago, I watched a series of documentaries on Netflix: Food Inc, Fed Up, What the Health and Forks Over Knives. Through watching these, I gradually learned how important it is to eat predominantly fruits, vegetables and whole grains along with healthy fats. I showed my husband--avid meat eater "where's the protein?"--these documentaries and I think it was half-way through What the Health when he looked at me and said "I'm done with meat." I was floored!
We started eating a vegetarian diet about 2 years ago and felt great! We still ate fish, eggs and butter but the rest of the animal products were no longer welcome. We also started to notice that when we were stuck in a situation where vegetarian options were not available and we were starving or it would have been super rude to turn the food away, that we would feel SO FULL and our digestive systems would be "out of whack" for a day or two after.
As an aside, I had also heard a lot about how sugar is so bad for you and so addictive--like cocaine--and I had started using half sugar and half ground dates in all of our baked goods. This was not hard to do, you can't tell the difference in the end product and it definitely reduced the amount of sugar I craved on a daily basis.
We honestly thought we had found the way we would be eating for the rest of our lives until Thanksgiving 2018. My sister and my niece have gone 100% vegan and in looking at how amazing my sister's skin and hair looked I thought maybe this was something I should consider. It wasn't that we were consuming that much animal product but she looked SO GOOD!
I went 100% vegan starting in December and I have to tell you I have never felt better. I no longer am STUFFED after completing a meal--no matter how much I eat. I also don't have the cravings for alcohol or sugar that I once had. In fact, when I do eat something that has full sugar in it, I have a very upset digestive system for a day or two after.
I think a lot of people think eating vegan means bland, boring food. I have to tell you, that is absolutely not true! As long as you use proper seasonings, your food can be absolutely amazing! I do think that restaurants are not doing it correctly (in my local area). I get a lot of food from restaurants that is not seasoned at all and I think that's because chefs here do not know what to do with a dish that doesn't contain any meat or cheese. If you eat vegan in a place like Los Angeles, it's delicious and has amazing seasoning because there are a ton of people out there that eat this way.
